Spiralizer with a TwistLosing weight is never easy, sometimes it's less about the pounds and more about learning how to "eat to live" as apposed to "living to eat"! Every little bit of help along the way is appreciated. Especially when you have an autoimmune disorder, like Multiple Sclerosis (MS), that loves to screw up the plan.

MS is an inflammatory disease that affects the ability of nerve cells in the brain and spinal cord to communicate with each other. The disease has a wide range of possible symptoms, from loss of sensitivity to muscle weakness to difficulties with coordination and balance. While MS cannot be treated with diet alone, eating healthy and keeping active are still important parts of staying healthy. Many diets, including the raw food diet, have been suggested as a way to control MS symptoms and slow the progression of the disease. Now a fully Raw Diet just isn't my thing , but with the help of the Spiralizer with a Twist my dietary choices have become cleaner and smarter.

The Spiralizer with a Twist allows you to swap vegetable noodles out for regular noodles, saving calories and adding to your lifespan! Think about the recipe before choosing your veggie. Root vegetables, like sweet potatoes or yams, are a better choice if you want the noodles to hold their shape and be able to fill in for pasta. If the vegetable noodles are going into a soup you can use a softer, more delicate vegetable, that exudes some water, such as zucchini or summer squash.

I have a ton of recipes that the Spiralizer with a Twist can substitute up a healthier alternative ingredient for, but my absolute favorite has to be Zucchini Spaghetti with Crazy Lentil Marinara.

Zucchini Spaghetti with Crazy Lentil Marinara

Zucchini Spaghetti with Crazy Lentil MarinaraIngredients:
  • 1 cup dried french lentils
  • 2 cups purified reverse osmosis water
  • 2 tablespoons cold pressed olive oil, divided
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 2-15 oz cans organic tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 6 medium zucchini, Spiralized with a Twist into the pasta shape of your choice
  • salt and black pepper to taste
Spiralizer with a TwistInstructions:
  1. Add lentils and 2 cups of purified reverse osmosis water to a medium pot. Bring to a boil and then lower to a simmer and cook until lentils are tender and liquid is evaporated, about 30 minutes.
  2. Meanwhile, add 1 tablespoon cold pressed olive oil to a pan over medium heat. Add the onion and saute for 5 minutes, or until translucent. Add the garlic cloves and saute for an additional minute, until fragrant.
  3. Add the canned organic tomato sauce, basil, oregano, thyme, and salt and pepper to taste. Simmer on low for 20 minutes.
  4. When lentils are done cooking, add them to the sauce and simmer for an additional 5 - 10 minutes.
  5. In a separate pan, add the remaining tablespoon of cold pressed olive oil and saute the zucchini pasta for 5 - 10 minutes, until desired tenderness is achieved.
  6. Divide the zucchini pasta among four plates and top with lentil marinara. Serve hot.
Notes:
 
Fresh zucchini will often lose moisture as the zucchini pasta cooks so be sure to drain any liquid that has built up in the pan. The recipe holds well as leftovers, but the zucchini does tend to release extra moisture as it sits so be sure to drain pasta before serving.
